Soya chunks are a dehydrated, processed food product made from defatted soy flour. This flour is the by product left after soybean oil has been extracted. It is then cooked under high pressure, extruded into small, porous nuggets, and dried.
When soaked in water or broth, these chunks rehydrate, expanding significantly and developing a soft, spongy, and fibrous texture very similar to meat, allowing them to readily absorb the flavour of spices and gravies.
